Cooking Experiment

Autumn as I previously mentioned, is pumpkins month, so even if I’ve never tried to use it for cooking before, I headed to the local  market to buy a small one.

I was determined to prepare pumpkin gnocchi as I eat every year during this period when I go back home . In Italy you can easily find them also in the counter of the supermarket, but here I’ve never found them..so let’s give it a try.

What you need:

350 gr of pumpkin

350gr of potato

180 gr of flour

1 egg

nutmeg

salt and pepper

cinnamon

Preparation:

First of all I opened and clean the pumpkin removing the seeds, then I cut it into pieces and put in in the over a 180°for about 25 minutes, the time for the pumpkin to soften. In the meanwhile I boiled in salted water about 350gr of potato with skin. Once both the pumpkin and the potato are cooked and lukewarm, remove the skin and pass them in the masher.  Now start adding the other ingredients, the flour, the egg, a bit of cinnamon, a bit of nutmeg, salt and pepper as desired until you obtained a homogeneous mixture. It is now time to start making the gnocchi! First of all form several “sticks” and then start cutting them into same-size pieces.

Put water to boil and cook one portion of gnocchi at time until they float (about a minute). Serve with a homemade tomato sauce or a simple sage and butter sauce, topped with some parmesan cheese.
